Thyme is a herb native to the Western Mediterranean; in Italy is present on nearly all the territory up to 900 meters above sea level. It is widely used in cooking to flavor many dishes, such as roast meat, gravies and sauces, vegetables, mushrooms, minced meat, fish, oil and aromatic vinegar. It is also used to prepare aromatic wines, liqueurs and infusions. Its aroma, very characteristic, keeps for a long time, even after cooking.
