Tagliatelle with nettle
Description
Nettle noodles retain the scent aromatic and herbaceous of this wild plant, offering a very delicate flavor. The noodles give their best if accompanied by condiments not too strong, that could cover the taste. We recommend using a typical Ligurian tomato-based sauce with rabbit and taggiasca olives, but they are also excellent simply with a drizzle of extra virgin olive oil and a sprinkling of Parmesan.
