Saffron, thanks to its high content of carotenes, gives to noodles their classic yellow colour; handmade and left to dry naturally, they keep intact the taste and organoleptic qualities. They are excellent to taste with a delicate sauce of shrimp and zucchini trumpets and a sprinkling of fresh parsley; in general they marry perfectly with fresh vegetables and cherry tomatoes. For a delicious recipe try them with sauce of squid and tuna bottarga.
