It is a true classic of the Ligurian tradition, now known and appreciated throughout the world for its versatility in the cuisine. It is prepared only with taggiasca olives and extra virgin olive oil that gives a pleasant taste with sweet and pleasantly fruity. A spoonful of this cream is an excellent idea to season a tomato sauce, fabulous on risotto or accompanied with canapés, also ideal as a topping for sauces.
