With a view to a continuous and constant enhancement of the extraordinary products of our Riviera di Ponente we could not ignore the “Chinotto di Savona”. A few years ago the cultivation was disappearing because it was not sufficiently profitable for the very few farmers in the area (from Varazze to Finale Ligure). Thanks to the recognition of Slow Food which established a product garrison, new trees have been planted and now the fame of the product has crossed national borders and boasts admirers all over the world. The jam obtained from it is pale green in color, very fragrant and aromatic; it has a flavor that causes sharp contrasts on the palate, sweet and bitter at the same time. For this reason, it is indicated both spread on bread (perhaps not for breakfast, but as a snack), and to accompany very mature cheeses.
